Crispy Chicken Wrapped Banana Spring Salad

This delicious Crispy Chicken Wrapped Banana Spring Salad is perfect for lunch or dinner. It only takes 25 minutes to make and you can customize too!

INGREDIENTS:
  • 7 oz. boneless, skinless chicken breast
  • 2 bananas peeled and cut into half
  • 3 oz. bread crumbs
  • 2 large eggs, beaten
  • 2 cup corn starch
  • 1 pinch black pepper to taste
  • 1 cup olive oil
  •  cup apple cider vinegar
  •  tsp honey
  • 1 large lemon(squeeze juice)
  • ½ tsp salt
  • 1 bag spring mix
  • 2 oz. medium-size red onion, sliced
  • 2 oz. cherry tomato
  • 2 oz. small red radish, sliced and pickled
DIRECTIONS:

Cut chicken breast into 4 thin cutlets. Sprinkle salt and pepper over chicken.

Wrap banana with chicken cutlet. Roll along the long side, starting from narrower side. Secure with two toothpicks at the end.

Coat the chicken roll with starch, egg, and then bread crumbs.

Fry at 300-350°F/150-180°C until golden, turning occasionally.

Cut each roll into 4 pieces.

Mix all salad dressing ingredients.
