My Mom’s Chicken Soup With Crepe Noodles

Not only does this double chicken stock taste so delicious, it also contains much more nutrients. This soup will nourish you back to health if you’ve been poorly, or it may support you in protecting and maintaining a healthy digestive tract with all those superb amino acids. The crepe noodles are a novel comforting addition that make this a splendid meal in a bowl.

In a large stockpot add all vegetables.

Add chicken bones and carcass to the pot.

Cover with cold water just until above the bones, no higher, and add parsley.

Bring water just to a boil. Then turn down to the lowest possible flame and let in simmer for 5 to 6 hours. Strain stock put into smaller containers, and refrigerate overnight.

Put 1 whole chicken in a pot that will hold the chicken and the 6 quarts of chicken stock. bring to a boil and simmer until the chicken is poached and falling off of the bone. about 2 hours.

Pull the chicken out of the stock and let cool. pull the poached chicken off the bone and set it aside for the chicken soup.

Add【For The Soup】to the chicken broth.

In a medium metal bowl whisk all 【Crepe Batter】 ingredients until smooth.

Heat a medium pan, add [crepe batter] cook until golden brown.

Slice the crepe and put it into a bowl, add chicken soup with garnish.
