Crispy Fish Fillet in Lemon Sauce

This easy fried fish recipe is from Chef John. The lemon sauce is the perfect compliment and great for dipping. You can choose a variety of fish such as flounder, cod, trout, snapper, etc.

INGREDIENTS:
  • 12 oz Rex Sole fish
  • 2 cup Corn Starch
  • 3 count Egg Yolk, Beaten
  • 2 cup Bread Crumb
  • 1 tsp Salt
  • 1 pinch Black Pepper Pinch
  • 0.25 cup Fresh Squeezed Lemon Juice
  • 1 cup Water
  • 1 count Lemon, Cut Into 6 Wedges,
  • 0.5 tbsp Sugar
  • 1 tsp Salt
  • 1 tbsp Custard Powder
DIRECTIONS:

Cut fish into 2-3 inch pieces, sprinkle salt and pepper over fish.

Coat fish with Cornstarch, egg and bread crumb.

In a large skillet heat oil to 150-180 °C / 300-350 °F. Fry fish until golden in both sizes. Turn over fish pieces occasionally.

Making sauce: In a large skillet over medium heat, combine all ingredients for sauce, stir and simmer for 5 minute. Add flour or starch to thicken.
